THE VOLATUS STORY BEGAN WITH A CHANCE MEETING IN THE LATE 1900’S

LT Hal Schmitt, a young Navy Fighter Pilot, was out wine tasting in the rugged hills of West Paso Robles. While at Midnight Cellars, he met local winemaker Rich Hartenberger and offered his assistance during the upcoming harvest. Just two weeks later, Rich and Hal processed their first fruit together and forged a deep and lasting friendship. As Hal’s Navy career took him around the world and included twice serving as a TOPGUN instructor, he always spent his down time learning the art of wine from Rich. Whenever in Paso Robles, whether for a weekend or a month, Hal would be elbow-deep in grapes or wine.

After making wine with Rich for over 9 years, Hal enticed his brother Kevin, a recent Fuqua School of Business grad, to work with him to make a wine of their own. The single focus was to create wines of distinction that expressed the personalities and passions of the brothers. Bringing Rich into the mix was second nature. So, with the team in place and an initial purchase of a ton of Syrah grapes, Volatus, Latin for "flight or flying", was born. As a member of one of the world’s most exclusive clubs, TOPGUN, Hal thrives on meeting every challenge with nothing but complete dedication and a perfectionist spirit. It is with this spirit that he shares his passion for flying and wine by bringing you Volatus!

The Crew

HALL “BULL” SCHMITT

Owner, Winemaker

A graduate of Notre Dame and a 2-time TOPGUN instructor Hal has a serious demeanor and a wonderful smile behind the tasting room bar. He loves to make wine and he loves to make incredible food that pairs deliciously with Volatus and Midnight Cellars' wines.

VICTORIA SCHMITT

Owner, Design and Marketing

A California girl from the start, Victoria met Hal at Midnight Cellars when he was just starting his new wine label. Unable to resist his charm she fell for his stable personality and similar passion for wine and food. She also introduced him to photography and art which has been incorporated into the lifestyle of Volatus.
Victoria is the head of marketing and design and the manager of their up and coming tasting room on the west side of Paso Robles. When they aren't conducting quality control they are photographing the beauty of the Paso Robles wine country, teaching clients photographic techniques, or traveling the county with their wine and photography tours.

TINA MACE

Head of Hospitality

I am originally from NorCal, but joined the US Army as an ordinance sergeant when I was 17 years old. I spent six years active duty, and 23 years as a military spouse and working Department of Defense teaching military fitness. My hobbies include gardening, cooking, backpacking, and traveling! I have been to 22 countries and 17 states so far! My dream is to visit the wine regions of Spain and Portugal next. My favorite volatus wine are Fox-3, FNG-1, and CAVU.

OLIVIA BRANDT

Wine Club

My name is Olivia and I am from Yorktown, VA! My father was a Naval Aviator so I feel right at home at VOLATUS. My favorite VOLATUS wine is a tie between the 2023 Crime of the Century and 2021 Morte de Caelo! If I want to pair with dinner, my go to is the Cab Sav no question.  If I want a light fun red by itself, I'd choose the Dolcetto. I lived in Florence, Italy for 6 months where I fell in love with wine before moving to Paso Robles!

DAN SZENTESI

Tasting Room Lead

I'm a surfer, swimmer, and Morro Bay native that joined the team in the fall of 2024 after 6+ years in all parts the Paso wine industry. I also coach swimming at Morro Bay High School and have spent 10 years as a surf instructor, specializing in adaptive surf training for wounded military and veterans. I love wine and its ability to bring people together through shared experiences. My favorite Volatus wines are the Charlie Chardonnay and Bloody Well Right Tannat.
